Marble Cheese Brownie


Very rich chocolaty brownie with mild cheesy flavour!!! What a wonderful combination.
This recipe really fulfils my chocoholic craving, by using Van Houten cocoa powder.... and my most favorite Philadelphia cream cheese!!!
IRRESISTIBLE :)

Recipe from small small baker

Ingredients
Brownie layer:
185g lightly salted butter
65g cocoa powder
3 eggs
160g caster sugar
60g self-raising flour
1 tsp vanilla extract

Cream cheese layer:
250g cream cheese90g
60g caster sugar
2 egg
45g self-raising flour
1 tsp vanilla extract


Method
1. Gently melt the butter in a small, heavy-based saucepan, then stir in the cocoa until blended and set aside.
2. Beat the eggs until light and fluffy. Gradually add the sugar and stir in the chocolate mixture. Sift the flour and fold into the mixture. Add in the vanilla extract.
3. Whisk together the cream cheese, sugar and egg. Sift self-raising flour over this mixture and fold in. Add in the vanilla extract.
4. Pour 3/4 of the brownie mixture into the base-lined tin and spread the cream cheese mixture over it. Drop spoonfuls of the remaining brownie mixture on top, making swirls in it with a skewer for a marbled effect. Bake at 160C for 40 minutes, or until the top is springy to the touch.
5. Cool the baked cake in the tin. Turn it out and cut into squares.



鸡蛋糕Strawberry Swirl Cake (Steam)













My mum always prepared this for our breakfast last time. It is soft and very much eggs flavour. I can continuously eating 4pcs and don't feel greasy.

Ingredients:
1 bowl eggs (est. 3 eggs)
3/4 bowl caster sugar
1 bowl flour
2 table spoon water
Strawberry Jam

Ways:
Beat eggs & sugar until peak and very fluffy, around 10mins (This step will affect its rising)
Add water, and fold in flour.
Pour the batter into a heat-prove bowl. Put some strawberry jam on top and use fork to make swirl.
Steam in a hot pot of water for around 20mins.

Chips More Cookies



My kids love this soOO......000 MUCH!! I named it Chips More Cookies, because this recipe really adds lots of chips inside. Every cruncy bites fulfill your chocolate needs! The easiest & fastest way u can have a cookie in your mouth! Highly recommended.

Ingredients:
115g butter
90g caster sugar
175 flour
1 egg
1 tsp vanilla essence
150g chocolate chips
80g almond nuts
Methods:
Cream butter and caster sugar till pale and creamy. Add egg and vanilla essence to mix well. Stir in flour, then chocolate chips and nuts.
Put a big spoonful on baking pan, line about 35pcs. Then use back of fork to press down, ensure all with same size.
Bake for 15mins.

Milo Chocolate Chips Muffins




My first attempt for muffins. Successful! But this recipe doesn't really suits my taste for chocaholic!

Ingredients:
270 g self-raising flour
30 g milo
1 tsp baking powder
55 g butter (soften)
60 g sugar
120 g chocolate chips
2 eggs (beaten lightly)
225ml milk
8 quares baking chocolate (melt)

Method:
Sieve the flour, milo and baking powder in a large bowl.
Rub in the butter until the mixture resembles bread crumbs.
Stir and mix the sugar and chocolate chips evenly.
In another bowl, whisk together eggs, milk and melted chocolate .
Pour the the milk solution all at one time into the dry ingredients.
Mix quickly until just blended. Do not over mix it.
Spoon the batter evenly to paper cup and sprinkles some more chocolate chips on top of it. Baked in the preheat for 20 mins at 200c or until golden brown, until the toothpick inserted into the centre comes out clean.
Cool in the muffin pan for 10 minutes then transfer to a wire rack to cool completely.

Pandan Kaya Nyonya Kuih

I prepared and cooked this recipe for the whole Sunday afternoon. However,this doesn't turn out as expected. The pandan kaya layer is not firm enough, maybe i should add in more flour. Despite its looks, it tastes well!

Lower layer :
300g glutinuos rice (soak 4hour)
100ml coconut milk
100ml water
1/2 tbls salt
pandan leave

Upper layer:
400ml coconut milk
2 eggs
100 sugar
2 tbls pandan essence
30g flour
25g corn flour
1 tbls salt


Methods:
Lower Layer
Grease a round 9 inch pan with some oil, then pour all the glutinuos rice with coconut milk & salt, stir well. Place the pandan leave on top of the rice, cover up and steam for 15 mins. Open the lid, take out the pandan leave, use a chopstick to stir the rice. Then, use the back of the metal spoon to press down the rice to get firm. Close the lid, continue to steam for another 15 mins.

Upper Layer
Stir the coconut milk, water, sugar, eggs and pandan essence until well mix. Add in flour, corn flour and salt. Stir all the ingredient on the gas until sticky like glue. Pour it on top of the rice and use back of the metal spoon to press a bit. Steam for 20mins. DONE!

Note: wait for the kuih to cool down completely, before cutting.

Dragon Fruit Jelly

Healthy Desserts & Fruity Jelly........ Best at Summer!!

Things to prepare:
20g jelly strips
60ml water
3 pandan leave, knotted
150g sugar
1 big dragon fruit, cut into small cubes

Things to do:
Wash & soak the jelly strips for 10 mins or more.
Bring water to boil. Add jelly strips, knotted pandan leaves and cook till it is fully dissolved.
Add in sugar and cook till it is completely dissolved, turn off heat.
Discharged pandan leaves, stir in dragon fruit into the jelly mixture.
Pour the mixture onto the jelly mould.
Allow to cool down before chill it in the fridge.

Ask kids to join

Sieve cake flour, corn flour & milk powder. Set aside.Cream butter & MILO in low speed for about 3 minutes. Do not overbeat.Add in the sieve flour and continue beat it for 1 minute to form dough.Divide the dough into 10g each. Put three chocolate chips into the dough and roll into balls.Decorate the dough balls with Coco Crunch as ear, chocolate rice as eye and a chocolate chip as nose.Baked at preheat oven at 140c for about 25 mins or until it's cooked.Leave it to cool before storing them in an air tight container.

Oreo No-Bake Cheesecake


This promised to be a heavenly creamy cheesecake! Do try it! No hassle to bake, just put in the fridge!!

Ingredients:
base:
8pcs digestive biscuits (finely chopped)
50g melted butter
filling:
300ml whipping cream
1 tablespoon gelatin powder
3 tablespoon boiling water
10ml lemon juice
250g cream cheese, soften at room temperature
50g icing sugar
45ml fresh milk
1 table spoon vanilla essence
8 pieces of oreo cookies (coarsely chopped)
4 pieces of oreo cookies (finely chopped)

Decorating:
Chocolate curls

Method:
Mix biscuit crumbs & melted butter together and press firmly with the help of a spoon onto the base of a 18cm cake tin. Chill for 30 minutes.
Beat whipping cream with electric mixer until 70% stiff or until mousse-like. Do not over mix. Takes about 2 to 3mins on low speed. Keep in the fridge.
Place gelatin powder, lemon juice & boiling water in a bowl. Heat a pot filled with water until just simmering and place the bowl inside the pot. Dissolve gelatin, lemon juice & boiling water in the bowl. Keep warm.
With an electric mixer, beat cream cheese , icing sugar, milk and vanilla essence until smooth & creamy. Blend in gelatin solution. Blend in whipping cream with a spatula.
Pour half of the cheese mixture into a bowl. Stir in finely chopped oreo cookies. Mix well. Pour the mixture the cake tin. Chill for 15 minutes.
Sprinkle coarsely chopped oreo cookies on top of the first half of cheese mixture which has been chilled. Pour in the remaining half of the cheese mixture. Chill for 3 to 4 hours before serving. Remove from pan and decorate with chocolate curls.

THIS IS TOO SINFULLLLLLLL........ MUST exercise more!!
(Surprisingly, the cake is finished within 24 hours!! still... not enough, they're asking for more...)

Ham & Cheese Macaroni


I baked this ham & cheese macaroni for my Sunday lunch. I enjoy it very much as this is my favorite dish! But, it's a pity that i am impatient to wait for the cheese to turn brown, or else, it will look nicer.

White sauce:
1 tbs butter
1 tbs flour
50ml water
1/4 teas salt
150 milk

Cooked macaroni
Ham, slice
Cheese
How to cook white sauce:
Heat flour, salt & water in a pot. Add in butter and stir well, continue to cook for 2mins.
Pour in milk and cook for another 3mins. DONE!
In a metal bowl, put in the cooked macaroni and ham. Pour in the white sause and stir well.
Place cheese on top. Bake until cheese turn brown. Serve hot!!!

Buttery Marble Cake

This is the most satisfied butter marble cake i had ever baked. It is rich moist and aromatic. I am proudly happy to share the recipe... MUST TRY!!

Ingredients:
100 plain flour
80 self-rising flour
250 butter
100 sugar
4 eggs
60 milo
1 tsp vanilla essence

Methods:
Sift the flours together and set aside. Cream butter and sugar till it becomes pale and creamy. Add in eggs, one by one, beating well. Add the vanilla essence. When the mixture is all mixed well together, fold in the flour.
Scoop 3-4 spoon of the batter and mixed it with milo to make this marble butter cake. In a preheated oven set to 180 deg C, bake your cake in a lined and greased pan for about 20 - 25 minutes til the cake is nicely browned at the top.
