My first attempt for muffins. Successful! But this recipe doesn't really suits my taste for chocaholic!

Ingredients:
270 g self-raising flour
30 g milo
1 tsp baking powder
55 g butter (soften)
60 g sugar
120 g chocolate chips
2 eggs (beaten lightly)
225ml milk
8 quares baking chocolate (melt)
Method:
Sieve the flour, milo and baking powder in a large bowl.
Rub in the butter until the mixture resembles bread crumbs.
Stir and mix the sugar and chocolate chips evenly.
In another bowl, whisk together eggs, milk and melted chocolate .
Pour the the milk solution all at one time into the dry ingredients.
Mix quickly until just blended. Do not over mix it.
Spoon the batter evenly to paper cup and sprinkles some more chocolate chips on top of it. Baked in the preheat for 20 mins at 200c or until golden brown, until the toothpick inserted into the centre comes out clean.
Cool in the muffin pan for 10 minutes then transfer to a wire rack to cool completely.

ReplyDeleteYa, I found the 1 tsp baking powder and 1 tsp of chocolate extract are missing in your recipe..??

If you found the cakes to be very flour flavour. Maybe you can amend the recipe to 260 g plain flour, 40 g MILO & 2 tsp baking powder.
ReplyDeleteLastly, make sure you got all the ingredient correctly measured as in the recipe..it's important for the cake baking. I once measured the butter wrongly and my dough turn out very sticky ~ LOL!!
