Nutella Cheese Cake











I am very happy to present my new invention cheesecake recipe -- Nutella Cheese Cake! Haha... It's rich and fulfilling, irresistible and yummy! A MUST TRY cheese cake !!!

Initially, I intented to bake a chocolate cheesecake yesterday, since i couldn't resist it after last visit to the Secret Recipe last Friday! However, i found my Nutella standing in front of my kitchen. Yes, why not give it a try! Nutella filling cheesecake , with chocolate spread as topping! Wooh, very enjoying...... :D

Another delights i would like to share with you ..... Anyone notice the photos i took for this post are better shot than previous? Ya, the natural lighting! I took them in my garden this morning at 8! Now, i understand the lightings are very important, although i am not using professional camera! Ha ;P

Biscuit Base:
150g marie biscuits + 6 tbls cocoa powder
120g melted butter
Cheesecake:
500g cream cheese
3 eggs
1/2 tin sweeten condensed milk (add more if you prefer sweeter)
2 tbs unsweeten cocoa powder
4 big spoon of Nutella

Topping:
1 1/2 tbl butter
50g baking chocolate

Method:
Base:
1.Crush biscuits then add in cocoa powder, mix well.
2. Pour in melted butter and mix with biscuits. Press hard into baking pan by using back of spoon to form base.
Cheesecake:
1. Beat cream cheese until soft and creamy. Pour in condensed milk and continue beating.
2. Add in eggs one by one, after each has fully dissolve into batter.
3. Stir in Nutella spoonful by spoonful, gently.
4. Add 2 spoonful of unsweeten cocoa powder.
5. Pour the batter on top of biscuits base.
6. Bake 160C for 45 mins. Leave it in the oven for another 1/2 hour.
7. Leave cool and apply chocolate topping.
8. Refrigerate overnight.
Topping:
1. Melt butter and chocolate in a heat-prove bowl inside a small pot of hot water on the gas until melt.
2. Once it's melt, quickly remove from heat and stir by hand until smooth.
3. Spread on top of cake.

Hamemade Pizza (bread dough)











I have lots of bread flour left in the fridge, after first attempt for bread making few weeks ago. Therefore, I am using bread dough to make this Pizza. At first, the dough went really sticky. But, i never give up this time, and try to keep kneading for a longer period. The original recipe from Cooking Crave requires only 2-3 mins of kneading, but i couldn't get it to form a ball. So, i continue for about 30mins, and it slowly become very soft! When i tear a bit, i could see it never break easily, like a piece of Mask? Haa! I think my last attempt to bread didn't get soft enough, just because i never knead enough. Now, i have the motivation to start my bread making journey again.... heee!

I am using Prego pasta sause as in picture (1/2 tin), and fry with dice onions. My toppings include hot dog with cheese, ham, canned pineapples, sliced tomato and grated Mozzarella Cheese.

Pizza Dough:
Makes one 7" pizza
100 g bread flour
1 tsp instant yeast
1 tsp sugar
1/2 tsp salt
67ml warm milk (110f/43c)
27ml warm water (110f/43c)
1 tbsp olive oil/corn oil

Method:
Sieve flour and yeast in a bowl. Add in sugar, salt and set aside.In another smaller bowl mix milk, water and olive oil. Pour it to the flour mixture slowly bit by bit and stir till it's well combined. The dough will be sticky at this time.In a flat surface, dust your hand with some flour and slightly knead the dough for 30 minutes until it can forms a ball.

Place the dough in a greased bowl, cover it with cling film and let it rest for 20 minutes.Remove the cling cover from the dough and punch the dough down so it deflates a bit. Roll it to the 7" round pan.Let the dough rest for 5 mins and brush it with some olive oil before we top it with topping.

Preparing the Pizza:
Preheat oven to 200c for at least 30 mins.
Brush the top of the dough with olive oil (to prevent it from getting soggy from the toppings).
Spoon on the tomato sauce , sprinkles with cheese and place your desired topping on pizza.
Cover it with more cheese on top, sprinkles some Parmesan cheese and some garlic salt on top. Bake in 200c for 15 minutes on greased pan.

Nutella Frosted Cup Cakes







I am very moody to writing this post :(

The looks of this Nutella cup cakes is delicious, right? But when i cut it into half,.... OH! how come it is so tough and not fluffy at all, eventhough i had used the cake flour? Am i not qualify for cupcakes? I am sad.....

(1) The upper part of nutella swirl is nice, but when bites further.... the butter cake is tough. I would say i failed, ahhhhhh!!!!!
(2) I left my camera in the office, and i can only capture this with my handphone..... that's why you can see the pics are in poor lightings..... Oh! another shock!

Seek for Cooking Crave's advice, and maybe i pour the flour all at one ??? Need spoonful by spoonful??? I don't know yet, for a second try?? maybe, but not now.....

Anyway, i trust Cooking Crave's recipe, so you may give this recipe a try and let me know how your cupcake turns out?? :)

Recipes from Cooking Crave

Ingredient:
10 tbsp(140 grams) butter, softened
3/4 cup white sugar (i use 75g only)
3 eggs
1/2 tsp vanilla
200 grams, sifted ap flour (i use 200g cake flour)
1/4 tsp salt
2 tsp baking powder
Nutella, approx. 1/3 cup

Methods:
Preheat oven to 325F(190c). Line 12 muffin tins with paper liners.Cream together butter and sugar until light, 2 minutes.Add in eggs one at a time, until fully incorporated. Don’t worry if the batter doesn’t look smooth. Add vanilla. Stir in flour, salt and baking powder until batter is uniform and no flour remains.Using an ice cream scoop, fill each muffin liner with batter.They should be 3/4 full, if you’re not using a scoop.Top each cake with 1 1/2 tsp Nutella.Swirl Nutella in with a toothpick, making sure to fold a bit of batter up over the nutella.Bake for 20 minutes.Remove to a wire rack to cool completely. Makes 12 cupcakes

Cheddar Cheese Cake v.2










This is something different from my favorite rich cheesecake that i always bake. From people who know me well, i always prefer rich cheesecake. The mild and cotton cake like texture is not my priotiry. It's just that i trust the recipe from Hsling so much that, i will give it a try.

To my surprise after first bite, the texture is SUPER SOFT like cotton! Even my children like it so...so much. You can taste the richness of eggs and it just like a sponge cake, with a little bit of savory flavour of cheddar cheese. It's a pity that the flavour of cream cheese is missing.... :(
As i never ever use cream of tartar in my baking before, i don't have it in my kitchen. I just substitute it with baking powder.

Afterall, there 's no disappointment for this recipe.
Recipes from HslingCheddar Cheese Cake V. 2
Ingredient:
65 superfine flour
1/2 tsp cream of tartar (i use 1 tsp baking powder)
60g butter
60g cream cheese
60ml milk
3 pcs cheddar cheese
4 eggs
65g sugar
Methods:
1. Put butter, cream cheese, milk and cheddar cheese into a bowl to cook by gas, in a pot fill with water. And leave to cool.
2.Whisk 4 egg whites and cream of tartar in to peak foam. Slowly add in sugar bits by bits and continue to whisk.
3. Stir in 4 eggs yolks into the cool cheese mixture. Then fold in flour.
4. Fold in the eggs white into egg yolks mixture by three portions, gently.
5. Steam-bake for 45 mins at 160C.

Oatmeal Banana Cake







A choice of healthy breakfast for a good start of the day!
The original recipe require for 90g flour with 90g wholemeal flour. I don't have the wholemeal flour, so i modify the recipe to 100g flour with 80g Quaker Oatmeal.
You don't feel it either greasy or moist or full after many pieces. It just like biting the Oats! So, i am relaxing and enjoying it very much. You many reduce the quantity of Oats if you want it to be more moisture.
Recommeded!! (This recipe can only produce a small loaf of cake)

Ingredients:
70g butter
30g brown sugar
1pc egg
200g ripe banana, smashed
1tsp banana essence
2 tsp baking powder
1 tsp baking soda
100g superfine flour
80g oatmeal
some sliced banana for decoration on top

Methods:
1. Grease the sides of a 3" x 7" loaf pan . Sift together plain flour, baking powder and baking soda, set aside.
2. Pre-heat oven to 180 degC.
3. With an electric mixer, whisk butter and sugar at low speed till the mixture turns pale and fluffy.
4. Dribble in beaten egg while whisking at low speed.
5. Stir in mashed banana and banana essence with a spatula.
6. Fold in oatsmeal and the flour mixture and mix with spatula.
7. Spoon mixture into prepared pan, smooth surface with spatula.
8. Arrange banana slices on top.
9. Bake for 45 mins until skewer inserted into the centre comes out clean.

Chocolate Chunk Cheese Cake








Chocolate CHUNK filling rich cheesecake.... Wow! Am i tempting you??
I love cheesecake, yes! I prefer RICH CHEESECAKE!
If you like chocolate & cheese, you will definately love this recipe a lot!
When you are enjoying the richness of the cheesecake, you will be delighted you are having some bites of chocolate ChunKs as well.... not small chocolate chips, but big chocolate chunks, Haha!!
(I don't chop it into small piece, but leave it to a piece... ) At the time i treat my tastebud nicely, i am sinsul to my Belly, Oh!!...

Recipe........
Ingredients:
Base:
(The original recipe used Oreo, but there's no stock in my kitchen. So, i replace with)
150g marie biscuits + 6 tbls cocoa powder
120g melted butter

Cheesecake:
500g cream cheese
4 eggs
8 tbls sugar
150g whip cream
1 bar baking chocolate, chopped into chunk

Method:
Base:

2. Pour in melted butter and mix with biscuits. Press hard into baking pan by using back of spoon to form base.
Cheesecake:
1. Beat cream cheese until soft and creamy. Add in sugar and continue beating.
2. Add in eggs one by one, after each has fully dissolve into batter.
3. Stir in whip cream, gently.
4. Stir in chocolate chunk into the batter, softly.
5. Pour the batter on top of biscuits base.
6. Bake 160C for 45 mins. Leave it in the oven for another 1/2 hour.
7. Leave cool and refrigerate overnight.



Chocolate & Nut Cookies




Famous Amos' cookies?? Anyone can resist this? The aroma of the cookies just bring your feet to their baking counter, isn't it? Yes, the secret is Here.....

I personally find that the texture is just right, but the taste is slightly different from Famous Amos. It just lack of something......
You may try to find out..... :)
Ingredients:
150g butter
110 caster sugar
30g brown sugar
280g flour
1/2 tsp baking soda
30g cocoa powder
1 egg
1 tsp vanilla essence
50g chocolate chips
100g walnuts
Methods:
1. Sieve the flour, baking soda, and cocoa powder.
2. Add in chocolate chips and chopped walnuts, set aside.
3. Beat butter and caster sugar and brown sugar till creamy. Add in vanilla essence and stir well.
4. Add in egg, continue beating until well combined.
5. Pour in the flour +nut mixture. Stir until well combined and it will be lumpy.
6. Shape it according to your liking.
7. Bake 160C for 20mins.

Blueberry Muffins



I love the Triple Chocolate muffin i made few days ago so...so much that, i use the same recipe to create a new recipe for this BlueBerry Muffins!!

As expected, it turns out just to my liking! I guess i will be using this recipe to invent more fillings ..... :)

Ingredients:
100g butter
50g castor sugar
130g self-rising flour
20g milk powder
1 tsp baking powder
50ml milk
2 eggs
blueberry filling

Methods:
1. Whisk butter and sugar until creamy. Add in eggs, one-by-one, after each has fully combine with the butter.
2. Pour in 1/2 the sieved flour + milk powder+ baking powder. Continue beating.
3. Pour in the milk, then follow by the other 1/2 of sieved flour + milk powder+ baking powder. Stir until well combine.

4. Pour a spoonful of batter into muffin cup, drop a teaspooon of blueberry filling, then fill up batter again to 3/4 cup. Use toothpick to make some marble effect.
5. Bake 160C for 25mins. Leave cool.

Mini Cheese Bun




My first attempt to use bread flour, to knead and make yeast bread. I have not much confidence as it requires skillful kneading in order to bring out a soft texture bread. Well, i just give it a try!

Hands are really tiring to knead the dough. I only knead for half an hour, and i let it proof on its own... Oops!... That's why my bread is not up to standard! When it is hot from the oven, it's still "acceptable" softness for bites. But, when it was left cool, the texture becomes harder, like "Scone".

Anyway, i still trust the recipe from Hsling. I think the problem lies with my kneading skill. Need to improve....

面团材料:
高筋面粉 300 克
芝士粉 10 克
盐 1/4 小匙
幼糖 30 克
即溶酵母 2 小匙
蛋液 50 克
鲜奶 135 克
牛油 45 克
洒面用:
蛋液 适量
拉丝芝士
幼糖 适量
1.高粉、芝士粉、盐、幼糖及酵母混合均匀。
2.倒入蛋液及鲜奶揉成面团。
3.加入牛油揉至非常有弹性。
4.盖着发酵40分钟。
5.挤出空气,分割面团,滚圆,休面5分钟。
6.将面团压扁,再滚圆,排入烤盘内。
7.用湿布盖着发酵45分钟。
8.扫上蛋液,洒上拉丝芝士及幼糖在面团表面。
9.预热烤箱160度,上下火烘烤20分钟。

Triple Chocolate Muffins








This muffin contains cocoa powder, chocolate chips and chocolate rice --- that's why it is called Triple Chocolate Muffins!

I highly recommend this recipe for the readers. The texture inside is soft, not so much flavour of flour. The chocolate chips add the bonus to the muffin, VERY NICE SMELL and YUMMY!!
The following recipe can only makes 7 muffins. It is NOT ENOUGH for us...... double the recipe to satisfy your craving for ChOcOlate!!!
My kitchen is full of the aroma of chocolate for the whole night........ :)

80g brown sugar ( i reduced to 50g)
2 eggs
130g self-rising flour
20g cocoa powder
1 tsp baking powder
50ml milk
1/4 cup of chocolate rice
some chocolate chips

Methods:
1. Whisk butter and sugar until creamy. Add in eggs, one-by-one, after each has fully combine with the butter.

2. Pour in 1/2 the sieved flour + cocoa powder + baking powder. Continue beating.

3. Pour in the milk, then follow by the other 1/2 of sieved flour + cocoa powder + baking powder. Stir until well combine, then stir in the chocolate rice.

4. Pour into muffin cups and sprinkle some chocolate chips on top.
5. Bake 160C for 25mins. Leave cool.
