Melting Moments




























My 2nd batch of CNY cookies this year......

Oh My God! These cookies just melt in the tongue the very first seconds i put into my mouth! Believe me, I never exaggerate. Just be glad and proud of this recipe shared by Hsling. I am so blessed and lucky to have met this wonderful recipe. LOL
You will never know the taste UNLESS U TRY IT!!!

Super easy and very simple ingredients...... u just GOT IT!

Ingredients:
250g SCS butter (choose good quality of butter)
80g icing sugar
250g potato flour
160g superfine flour

Methods:
1. Whisk butter and icing sugar until creamy.
2. Sieve the the mixture of flour and add to the butter mixture. Stir until dough form.
3. Scoop the dough with a teaspoon, roll on the palm into balls. Place on the baking tray with parchment paper. Use back of fork to press slowly for the design.
4. Bake 150C for 20mins. Don't bake until golden or brown.

Cheddar Cheese Cookies

My CNY home-made cookies series has started. First cookies baked and uploaded in Year 2010, is one of my favorite ---- cookies with CHEESE!! I am glad that it's nicely smell and cheesy taste. Those who love cheese like me, should try this!

Few weeks ago, i have been searching internet for cheese cookies. At last, i found two. One uses parmesan cheese and the other use cheddar cheese. One mix with eggs while another without eggs. I just mix and match there and here comes my first cookies of the year!! Haahaa....

Recipes

Ingredients:
120g soft butter
60g icing sugar
1 egg
240g superfine flour
1/2 tsp baking powder
100g grated cheddar cheese
25g grated cheddar cheese (to spinkle on top of cookies)

Methods:
1. Mix butter and icing sugar until pale and creamy.
2. Add in egg, continue beating until well-mix.
3. Add in 100g grated cheddar cheese, continue beating.
4. Slowly stir in flour with baking powder with spoon, until it form into dough.
5. If you find it too sticky, chill in fridge for 1/2 hour.
6. Roll the dough flat, and make your own shape of cookies.
7. Bake 170 for 18mins.

Coconut Tarts











Be frank, i hate food with coconut previously!

But, since i tried the pineapple and coconut tarts from 雪园 (a famous cake and pastry coffee shop in Kluang), i started to appreciate it!

I want to try making a coconut tart, and hope i could get the right taste. Well, i need some improvement. The coconut filling smells very NICE! However, i am not very satisfy with the taste. Too plain... should add more sugar and salt for a better taste. Moreover, the coconut flake inside is not yellowish too! Should i add more butter for the yellowish??

For pastry, i follow the Apple Pie pastry recipe.

Please update me if you have a better coconut tarts recipe, ok? ^D^

Blueberry Cheesecake



I try this cheese cake with chocolate sponge cake base. But i think i never did well in the sponge cake. It's not soft at all..... :(

Never mind.... the cheese cake turns out very smooth and silky. Maybe the method of melting the cheese cheese and adding the watery whipping cream did the contribution :)

Steam bake method really make it more presentable ... no cracking and the cream cheese never turn browny around the rim. :)

The combination of blueberry and cheese is really YUMMY!!!

Recipe from Mikiko 蓝莓芝士蛋糕

Chocolate Cake Base:
2 eggs
40g sugar
50g flour
2 tbls cocoa powder
25g melted butter

1. Beat eggs until bubble, add in sugar in 3 times. Beat until
2. Add in flour and cocoa powder, continue stiring. Pour in the melted butter, continue stiring until all combine.
3. Bake 160C for 10 mins. Leave cool. Put back into baking tray.

Cheese Batter:
250g cream cheese
50g sugar
140ml whipping cream (no need to whisk)
2 egg yolk
1 tbl cakeflour
Blueberry filling

1. Melt the cream cheese with sugar on gas. Use spoon to stir continuously until the cheese batter become silky and smooth.
2. Off the gas. Pour in the whipping cream, stir until well mix.
3. When the cheese batter has turned cool, add in 2 egg yolks and cake flour. Stir until well combined.
4. Add in 2 table spoon of filling and stir well (up to your preference)
5.Pour the cheese batter on the chocolate cake. Steam bake for 30mins at 160C. Leave in the oven with door open for another 1hour.
6. Leave cool, spread some blueberry filling on top. Refrigerate overnight.
