Recipe from Kevin Chai 《幸福下午茶》
150g crushed Chocolate marie biscuits (I use Chipsmore hazelnut cookies)
80g melted butter
400g cream cheese
80g caster sugar
4tsp cocoa powder
1tsp instant coffee powder
160 whipping cream
160 melted baking chocolate
1. To make base, stir all ingredients until combined. Press mixture into base 7inches cake tin.
2. To make filling, beat cream cheese, sugar, cocoa powder and coffee powder until smooth.
Beat in eggs, one at a time, beating well after each addition.
3.Stir in whipping cream, mix well.
4. Then stir in melted chocolate until well blended. Pour filling into prepared tin.
5. Bake in preheated oven at 160C for 45mins or until cooked. (I steam-bake the cheesecake)6.Remove from heat and leave to cool. Chill in fridge.
