Oatmeal Banana Cake







A choice of healthy breakfast for a good start of the day!
The original recipe require for 90g flour with 90g wholemeal flour. I don't have the wholemeal flour, so i modify the recipe to 100g flour with 80g Quaker Oatmeal.
You don't feel it either greasy or moist or full after many pieces. It just like biting the Oats! So, i am relaxing and enjoying it very much. You many reduce the quantity of Oats if you want it to be more moisture.
Recommeded!! (This recipe can only produce a small loaf of cake)

Ingredients:
70g butter
30g brown sugar
1pc egg
200g ripe banana, smashed
1tsp banana essence
2 tsp baking powder
1 tsp baking soda
100g superfine flour
80g oatmeal
some sliced banana for decoration on top

Methods:
1. Grease the sides of a 3" x 7" loaf pan . Sift together plain flour, baking powder and baking soda, set aside.
2. Pre-heat oven to 180 degC.
3. With an electric mixer, whisk butter and sugar at low speed till the mixture turns pale and fluffy.
4. Dribble in beaten egg while whisking at low speed.
5. Stir in mashed banana and banana essence with a spatula.
6. Fold in oatsmeal and the flour mixture and mix with spatula.
7. Spoon mixture into prepared pan, smooth surface with spatula.
8. Arrange banana slices on top.
9. Bake for 45 mins until skewer inserted into the centre comes out clean.
